Hey, I’m Ashley!
Even though I have made North Carolina my home and plant-based eating my lifestyle, I grew up on an Angus cattle farm in Indiana where meat was a central part of my diet. Only after healing myself of lifelong chronic constipation through healthful, plant-based eating did I arrive at my life’s work as a dietitian. Now, I find an immense amount of joy in aspiring others to find a healthier, more gratifying version of themselves.
When I’m not checking in with clients, on the road visiting nursing homes, or meal prepping for the week, you might find me walking my dogs in downtown Durham, sweating it out at a CrossFit session, sipping on a macadamia nut milk latte at a local café, or making delicious, plant-based dishes for my friends and family. One of my favorite crowd-pleasers is loaded cashew-cheese nachos with fresh salsa and avocado – the larger the sheet pan, the better!
I earned my Masters of Public Health and Nutrition from the University of North Carolina at Chapel Hill. I am a Registered Dietitian Nutritionist (RDN), Licensed Dietitian Nutritionist (LDN), and Virtual Nutrition Coach.
