Even though I have made North Carolina my home and plant-based eating my lifestyle, I grew up on an Angus cattle farm in Indiana where meat was a central part of my diet. Only after healing myself of lifelong chronic constipation through healthful, plant-based eating did I arrive at my life’s work as a dietitian. Now, I find an immense amount of joy in aspiring others to find a healthier, more gratifying version of themselves.
When I’m not on the road visiting nursing homes, which is my primary occupation as a dietitian, or meal prepping for the week, you might find me walking my dogs in downtown Durham, sweating it out at a CrossFit session, sipping on a macadamia nut milk latte at a local café, or making delicious, plant-based dishes for my friends and family. One of my favorite crowd-pleasers is loaded cashew-cheese nachos with fresh salsa and avocado – the larger the sheet pan, the better!
I earned my Masters of Public Health and Nutrition from the University of North Carolina at Chapel Hill. I am a Registered Dietitian Nutritionist and Licensed Dietitian Nutritionist (RDN/LDN) and am the North Carolina State Coordinator for the Vegetarian Nutrition Dietetic Practice Group.
